Food Storage Friendly: Easy Chicken Fiesta Soup

This is a tasty and incredibly easy recipe that my wife came up with. It uses all canned goods, which makes it a "food storage friendly" recipe. This is the kind of food storage cooking that we like--easy and delicious, with some of that good ol' homemade quality. It's pretty low fat and healthy too, and a batch is enough to feed a family (we usually get about 6-8 full servings out of it). We usually serve with some shredded cheese and tortilla chips on top.

Easy Chicken Fiesta Soup


Ingredients:
  • 1 can of corn, drained
  • 2 cans of black beans, drained
  • 1 can of shredded chicken, drained (we use Costco canned chicken)
  • 1 (10oz.) can of direct tomatoes with green chiles
  • 1 cup of salsa
  • 1 can of cream of chicken soup
  • 1 cup of chicken broth
Directions:
  • Combine ingredients in large pot
  • Simmer for at least an hour
Notes:
This makes a fairly thick soup; add more chicken broth for a thinner consistency.
